Chairman’s Reserve Center Cut Top Sirloin is a BOLD cut of beef that’s super delicious! A cut of beef like this needs some bold flavors. I went with an Asian flair, using a salty and mildly spicy Kimchee binder and an Umami seasoning to balance the flavor profile of this beef.
I applied the binder and coated the beef heavily with the seasoning. I placed it indirectly and smoked it at 225 degrees Fahrenheit for about 90 minutes. Since I cook to temperature, I pulled it when the center of the cut was 127 degrees. I removed it from the smoker and rested it for an hour.
I sliced it up thin, and it was a house favorite—tender, beefy and full of balanced flavors.
